Has any real estate agent ever experienced a buyer testing the accoustics of a space like this? Or maybe you had a buyer who’s a singer or musician testing the accoustics? How important are accoustics to buyers?

Yes, as a matter of fact, I had a client that offered voice lessons from home and needed a room with good acoustics for piano and voice. Fortunately, I have some background with live sound, so when we came upon a house with a greatroom with vaulted ceilings and windows, I began clapping (to get a feel for slapback or echoing) and humming scales (to find the resonant frequency of the room). They were surprised with my understanding of reverb and surface treatments, and eventually bought the place. Nowhere near as exciting as the featured video, however.
